We are in the northern part of Upper Piedmont, precisely in Oira - Crevoladossola, a small village surrounded by the Alps and constantly exposed to the sun. Here, it is grown mainly Nebbiolo grapes to produce Prünent wine, a sort of cousin of the noble Piedmontese grapevine.
Most of our grapevines are ungrafted and there are some centuries-old ones. Steep mountainsides are marked by steps carved into the rock and bordered by dry stone walls. Here, the cultivation is hand-made from the pruning process to the grape harvest.
Moreover, in 2019 was founded the Doc Ossola Valleys (Doc Valli Ossolane).
Grapevines:
100% Nebbiolo biotype Prünent
Alcohol:
13,5% Vol.
Serving temperature: 16 - 18°C
Bottles produced: 5000
Organoleptic properties: Garnet-red colour. Its profile reveals medicinal and balmy herbs notes and hints of liquorice and of gentian root. The sip is pleasant and the mouthfeel is slightly tannic and dynamically fresh.
Food pairing: Meat and game dishes; aged cheeses.
Maximum aging time: 10 years in bottle.
Winemaking: Grapes are pressed and fermented for 10 days in stainless steel tanks at a maximum temperature of 28°C.
Maturation process: The spring following the grape harvest, the wine is placed in a barrel for a year to start the malolactic fermentation. Afterwards, the wine is bottled and rests for 6 months before being ready for sale.
Climate: It is hard in spring with the constant risk of frost. The summer is rather hot and sunny but often refreshed by storms. In late August and September, there is a great temperature range between day and night, which fortifies the grape skin and makes develop our wines' strong aromas.
